Brewing Delicious Coffee with Your Clever Dripper

The Clever Dripper is a handy coffee tool to have if you like experimenting with brewing coffee in different ways, you can use it as an immersion brewer, Cafetiere / French Press style, or as a regular v60-style filteration brewer.

The absolute best feature on the Clever Brewer for us is the built-in shut off valve at the base of the dripper that only opens when placed on a cup or carafe. This is so handy for keeping things clean, and also allows you to steep the coffee for as long as you like before draining, giving you a little more control time on the brew.

What makes the immersion brewing special on the Clever Dripper is that it after brewing the coffee passes through a paper filter much like v60 or chemex brew to give a super clean tasting brew in the cup over a regular French press brewer.

They also offer a large sized brewer, which allows you to brew two cups in one sitting, which is great for sharing!

How to brew with the Clever Dripper

At first getting, the brew results right can be a little stressful so we’ve put together this quick guide to get you and the road to great brewing in no time.

The key thing to know when setting up your brewer is how you want to brew. The immersion brew is the most common, but if you’re aiming for a filter brew, then you’ll want a slightly different grind size and brew technique, which we’ll outline below.

What you’ll need:
15g of coffee.
250g of fresh cold water

Grind Size:

Immersion: A coarse (Cafetiere) grind is best.
Filter: Aim for a medium (filter) grind.

Instructions:

Immersion brewing:

Step 1: Set your water to boil in your kettle. If you have a temperature control on your kettle, aim for 95ºC.

Step 2: Set up your Clever Dripper by inserting paper filter inside the main brew chamber. We recommend priming the filter with a touch of cold water to dampen it before adding the coffee.

Step 3: Place your dripper on a set of digital scales. Turn on or zero your scales and add your 15g of dry coffee. Re-zero your scales again here for the next step.

Step 4: Begin your timer as you pour in 250g of hot water (95ºC). Feel free to give the brew a gentle stir to ensure the coffee and water mix well.

Step 5: Place the lid on to top of the dripper, and let it all sit and brew until your timer reaches around 2:15 minutes.

Step 6: To start your filteration, set the dripper on your cup. This should take until roughly 3:00-3:30 on your timer.

For filteration brewing:
The only difference to the above is that you will place your dripper on the top of a cup on your scales, and zero it off. As the water boils, start you timer and apply 80g water in 1 minute intervals. You should be aiming for a target weight of 250g and a completed brew time of 3:00 – 3:30 mins.
